Maggie's mushroom and cheese tartlets

6 large flat breakfast mushrooms
1 red pepper, roasted and chopped
1 yellow pepper, roasted and chopped
60g breadcrumbs
60g softened butter
4 dsp chilli sauce
6 slices Durrus cheese
6 slices Gubbeen salami
1 cooked cheese-and-tomato pizza
drizzle of lemon oil

Wash and prepare the mushrooms. Mix the peppers, breadcrumbs and butter together with the chilli sauce. Season. Put this mixture on the upside of mushrooms and put the salami and then the Durrus cheese on top.

Put on a baking tray in a hot oven for seven minutes, so the cheese is melting, then place on slices of warm pizza. Serve with fresh leaves and a drizzle of lemon oil.
