Ingredients

  • 50ml tamari or soy sauce
  • 3 tbsp sherry
  • 1 tbsp maple syrup
  • 30g knob of ginger, peeled and finely chopped
  • A few chili flakes
  • 2 cloves garlic, crushed
  • 6-8 boned chicken thighs
  • 2 tbsp sesame seeds</li>

Preheat the oven to 200 degrees/gas 5. Make the marinade by mixing together all the ingredients except the chicken and sesame seeds and then pouring it over the chicken, stirring well and leaving for at least 30 minutes, preferably an hour. Spread on a baking tray and cook for half an hour in the oven, stirring once or twice, until nicely charred and cooked through. If they are not charred enough for your liking, finish them under a hot grill before sprinkling over the sesame seeds and serving.
