Ingredients
- (makes 20 or so)
- 300g raw cashews
- 300g stoned dates
- 150g almond butter
- 4 tbsp maple syrup
- 50g coconut flour
- 50g dessicated coconut
- Topping
- 150g dark chocolate (85%)
- 1 tbsp coconut oil
Make the base of the bars by blitzing all the ingredients together in a food processor. You may need to do this in two batches. If so, transfer the lot to a bowl afterwards and mix thoroughly. Then press the mixture into a baking tray lined with parchment paper, and place in the fridge to set.
To make the topping, melt the chocolate and coconut oil in a bowl over hot water. When the base is set, pour the melted chocolate on top and chill until set.
