Ingredients
- (serves 4)
- 2 ripe avocados, peeled and diced into 1cm dice
- ½ sweet white onion or 1 large shallot, peeled and finely diced
- 1 tsp Tabasco sauce
- salt
- 20g fresh coriander, roughly chopped
- juice of 1 lime
In a blender, blitz together all the ingredients – except the avocados – until you reach a pesto-like consistency.
Then dress the cubed avocado with the dressing, in a bowl, and serve.
