HERE is a promising new venture. Pierce and Valerie McAuliffe, of the Neptune Restaurant in Ballyhack, Co Wexford, have teamed up with that fine chef, Martin Dwyer of Dwyer's Restaurant in Waterford, to open the Ballyhack Cookery Centre.
"This is a serious, full-time venture," says Mr McAuliffe, "with a deliberate emphasis on Irish cooking and our wonderful, natural Irish food products".
They are planning one-day and three-day courses during off-season periods, designed for town and country homes and farmhouse accommodation operators, and there will also be pub and club courses.
The first course gets underway with one-day introductory demonstrations on Wednesday March 12th and Thursday 13th, at £30 per person.
