Sir, - We were astonished to learn (The Irish Times, April 28th) that Irish beef production will need to be tailored to please the "Continental palate". Having lived for 15 years in three different countries on the Continent, we had concluded that the Continentals had no palate for beef. Indeed, while the Germans marinated their beef to make it edible and the French cunningly disguised theirs with sauces, we simply stopped eating the local stuff.
It is to be hoped that changes made to increase our market share on the Continent will not lessen the high quality of Irish beef we enjoy at home. - Yours, etc.,
