Sir, - The observation by Mr John Horgan of Kepak (The Irish Times, April 28th) that Irish beef has been a successful export to the UK, but does not appeal to the Continental palate, is instructive. Based on my shopping experience over many years in Europe, I am convinced that only the British and Irish know and appreciate decent beef. It would be a shame to lower your standards to meet EU taste, or lack of it. - Yours, etc.,
