Ingredients
- Serves 6-8 as a dip
- 250g tub of ricotta
- Olive oil
- Salt and pepper
- Dried herbs – whatever you have handy: oregano, rosemary, mint, marjoram and thyme are good.
- Squeeze of honey
Preheat oven to 180 degrees and place the cheese in an oven-proof dish, sprinkle liberally with the herbs (1-2 tbsp should do it), drizzle with olive oil and honey, season and then pop in the oven for 20 minutes. To finish, give it a blast under the grill to caramelise the honey. To serve, place on a dish, accompanied by the cheese straws.
