Ingredients
- 4-5 tbsp beef dripping
- 2 kg potatoes, Roosters work well, peeled
- Sea salt and fresh ground black pepper
Heat the oven to 220 degrees C/gas 7. Heat the beef dripping in a sturdy baking tray over a medium heat on the hob. Add the potatoes, with plenty of seasoning and turn until golden brown and crisp. Put the tray into the oven and roast for 40-45 minutes until the potatoes are cooked through (they should give easily once pierced with a knife). Drain on kitchen paper and serve.
