Ingredients
- 200g cherries, stoned and halved
- 2 tsp balsamic vinegar
- 2 tbsp olive oil
- 40g toasted flaked almonds
- Bunch basil, torn
- 100g buffalo mozzarella
- Extra 50ml olive oil
- Mixed leaves
Slice the mozzarella and marinate it for 20 minutes in the 50ml of olive oil, basil and salt and pepper.
Next, make a dressing for the cherries by mixing together the balsamic and olive oil and tossing the cherries in it.
To serve, arrange slices of the mozzarella on top of some baby mixed leaves and scatter over the cherries, almonds and some extra basil leaves.
