Ingredients
- 400g of a smooth good quality peanut or cashew butter
- 150g nibbed almonds
- 100g destoned and chopped medjool dates
- 100g chopped figs
- 45g organic coconut oil melted
- 200g desiccated coconut
- 400g rolled oats
- 50g raisins
- 200mls coconut water
- 60g agave syrup
- 150g of mixed seeds of your choice e.g. chia, linseed, sunflower, sesame, pumpkin
Combine the peanut butter with coconut water and oil to a smooth paste, fold in the dry ingredients until mixed through.
Line a flat tray with some parchment paper and spread the mix evenly, put another piece of parchment on top and press with a rolling pin. Let it set in the fridge overnight.
When set, cut into small bars and keep in an air-tight container up to two weeks.
