Ingredients
- 6 free range chicken breasts
- 150g plain flour
- Salt and pepper
- 30ml olive oil and 50g butter for frying
- An additional 70g butter for cooking
- Lemon wedges for serving
- To serve: mashed potato, sautéed spinach or steamed broccoli
1 Preheat the oven to 200 degrees.
2 Mix the flour, salt and pepper in a shallow bowl.
3 Evenly coat the chicken breasts in the flour.
4 Melt half the oil and butter in a large frying pan. Fry the chicken breasts over a high heat three at a time. After five minutes on each side they get a golden colour.
5 Transfer to an ovenproof dish while you colour the rest of the chicken with the remaining butter and oil.
6 Arrange all six chicken breasts snugly in the dish and dot evenly with the remaining 70g of butter. Cover with butter paper or foil and cook for 15 minutes.
7 Remove the butter paper; turn the chicken and spoon over some of the melted butter. Cook for a further 5-10 minutes until golden.
