Christmas party cocktails: How to make an All-Irish Punchbowl

Ingredients

  • 3 lemons plus extra slices to garnish
  • 2 sticks rhubarb chopped into chunks
  • 1 x 250ml jar of Irish honey
  • 1 litre cloudy Irish cider (if you want the punch to be less strong, add more juice)
  • 1 litre Stonewell Dry Cider (or any other Irish cider but it must be dry)
  • 1 x 70cl bottle of Jameson whiskey
  • Ice cubes
  • 2-3 apples, sliced, to garnish
  1. Zest the lemons with a microplane or fine grater, then squeeze the juice. Put both into a blender with the rhubarb and honey. Fill the empty honey jar with hot water, seal it and give a good shake to get any remaining honey from the jar. Pour into the blender along with the apple juice. Blitz for 10 seconds.
  2. Pour through a mesh sieve into your punch bowl, keeping any solids out. Follow that up with the whiskey and cider. Stir in some ice and garnish with apple and lemon slices. For each serve, fill a small wine glass with ice, fill it up with punch and garnish with slices of apple and lemon. You can batch it all bar the cider and garnishes and keep it in the fridge, adding those when your guests arrive.
