Ingredients
- 1 tin coconut milk
- 2 large tomatoes, cut into chunks
- 1 ripe avocado
- 2 cloves garlic, peeled and crushed
- Big knob ginger, peeled and sliced
- 25g miso paste (1 large tbsp)
- Juice of 2 limes and 2 lemons
- 1 courgette, sliced
- 1 red chilli, de-seeded and sliced
- Big bunch each of coriander and basil
- 1 tbsp fish sauce
- Salt and pepper
- 1 red onion, very finely chopped, for garnish
- Coriander, for garnish
This couldn’t be easier. Blitz everything except the onion and coriander in a liquidiser or food processor to form a smooth soup. This takes about two minutes. Pour into bowls and sprinkle the finely chopped red onion and coriander on top.
