Crab and apple bites

Ingredients

  • 1 green eating apple (Granny Smith), peeled, cored and finely chopped or coarsely grated
  • Juice of 1 lemon, strained
  • 500g crab meat, drained
  • 2 tbsp mayonnaise
  • Salt and freshly cracked black pepper
  • Half tsp Tabasco
  • To serve:
  • 1 tbsp chopped fresh flat-leaf parsley
  • 1 tbsp chopped fresh coriander (optional)
  • You will also need Chinese spoons or dessertspoons, to serve</li>

Pour half of the lemon juice over the chopped (or grated) apple to prevent it from discolouring while you prepare the crab.

Flake the crab meat into a bowl with a fork. Stir in the mayonnaise. Season with salt, pepper and Tabasco (if you want to add a bit of kick). Add the chopped apple and stir in the remaining lemon juice. Taste and season as needed, adding more salt, pepper or Tabasco, to taste.

Divide the mixture between the number of spoons you’re using and garnish each one with chopped parsley and coriander (if using).

CHEFS TIP: If serving this as a canapé, allow for three canapés each and 10g per spoon. This recipe makes enough canapés for a party of 16 guests. Alternatively, you will get seven starter portions by using a 6cm x 3cm circular pastry cutter as a mould, allowing 70g per portion
