Ingredients
- Serves 8-10
- 1 head of red cabbage, grated in a blender
- 2 red onions, very finely sliced
- 4 fresh beetroot, peeled then grated in a blender
- 4 tbsp olive oil
- 2 tsp honey
- 2 tbsp cider vinegar
- Bunch fresh rosemary, finely chopped
- Salt & pepper
In a (very) large bowl, use your hands to toss all the grated and sliced vegetables together to create an even mix of flavours. In a separate bowl, gently whisk together the ingredients for the dressing and, again using your hands, mix the dressing through the slaw. Serve with the ribs.
