“There is a wide range of botanicals you can use to appeal to different tastes and pair with different foods. More traditional gins are juniper led and can be very similar. Today’s gins might have a citrus or a herbal or a spice flavour.”

Preferences have changed as well. “It’s not just a traditional G&T any more, some people prefer gin and soda and others like it in cocktails. And the way people drink has changed. They are drinking a lot less for health and other reasons, and they prefer to have one very good quality drink. Another reason it might attract gens Y and Z is because a lot of smaller scale distilleries have a provenance and people can get a sense of where and how the drink has been made.”
