What is it?

Finishing Jus, from Marks & Spencer (€4/200g).

What’s good about it?

This is a concentrated gravy, made with beef and chicken bones, that is ready to use, so no stock pot simmering is required. A handy shortcut, for when making gravy from scratch might be a step too far,

How do I use it?

It is ready to use as a posh sauce, dotted artistically on a plate. But it can also be used as a flavour bomb, to bring instant depth of flavour. Chef, TV presenter and Marks & Spencer ambassador Mark Moriarty suggests adding a spoonful to a bolognese sauce, and it would also be a good addition to a stew or casserole. I have added it to a pan of fried sausages and onions for a quick and tasty dinner. The tub isn’t huge but the flavour is concentrated so you can add a bit of wine or water to make it go further.

Where can I get it?

It is available in the meat counter chill cabinets at branches of Marks & Spencer Ireland. Buy it in multiples and store it in the freezer, Moriarty suggests.

Anything else?

As well as beef and chicken bones, the ingredients are water, tomato puree, salt, onions, carrots, leeks, parsley, garlic, white peppercorns and ground bay leaf. It is gluten free.
