When William Saucedo and his wife, Laura Ximena Justiniano, came to Letterkenny in Co Donegal in 2022, they were seeking a safer place with better educational opportunities for their four children. It was a far cry from their hometown of Santa Cruz de la Sierra, on the edge of the Amazon Rainforest and the Andes Mountains.
“I am proud of the hospitality of the people from Santa Cruz de la Sierra,” says Saucedo, who still yearns for his relatives in Bolivia. “We chose this recipe because it is a traditional recipe that a Cruceno [native of Santa Cruz] eats.”
