Ingredients
- 300g of lamb, cubed (or chicken or beef)
- 6 potatoes, chopped, skin on
- 4 garlic cloves
- 1 can of chopped tomatoes
- 1 tbsp tomato purée
- 1 can of reduced-fat coconut milk
- 1 tsp cumin
- 1 tsp garam masala
- 1 tbsp curry powder
- 1 tsp ginger
- 1 tsp turmeric
- 1 tbsp mango chutney
- 2 bay leaves
- 1 lamb or chicken stock pot or cube
- 1 onion, peeled and chopped
- Salt
- 1 tbsp of cornflour, if you want a really thick sauce
- Fresh mint to garnish
1. Add all of the ingredients except the fresh mint to the slow cooker and cook on high for four hours or on low for eight hours. Add the mint. DONE.
