Ingredients

  • 500g turkey mince
  • 1/2 tsp salt
  • 1 egg
  • 1 bunch parsley, chopped
  • 1 tbsp milk
  • 350g grated cheese, plus 4 slices of cheddar cheese
  • Salt and pepper
  • FOR THE BURGER SAUCE
  • 150g mayonnaise
  • 50g pickles, diced
  • 1 shallot, diced
  • 1 pinch cayenne pepper
  • 1 small bunch dill, chopped
  • Salt and pepper
  • TO SERVE
  • 4 burger buns
  • 1 large beef tomato, sliced
  • 1/2 head of lettuce, picked into leaves

1. Mix the turkey, salt, egg, parsley, milk, pepper and salt in a large bowl and shape into four burgers.

2. Make a small hole in each burger and stuff a quarter of the grated cheese inside. Leave to set in the fridge for 15 minutes.

3. Heat a pan over medium-high heat. Add enough butter to just coat the bottom of the pan. Add the burgers to the pan and cook until browned on each side and then place a slice of cheese on top. Cook in a preheated oven (180 degrees) for 10 minutes, until cooked through.

4. For the burger sauce, mix all the ingredients together and set aside.

5. Place the cooked burgers in a toasted bun and garnish with the burger sauce, sliced beef tomato and lettuce.
