Ingredients
- 4 slices of bread (or English muffins)
- 2 large eggs
- 120ml milk
- Salt and pepper
- 1tbs butter
- For the hollandaise:
- 2 egg yolks
- 1tsp lemon juice
- 1tsp white wine vinegar
- 120g butter, melted
- Salt and pepper
- To serve:
- 4 slices of cheddar cheese
- 4 slices of bacon
- For the French toast: in a bowl, whisk together the eggs, milk, salt, and pepper until well combined. Dip each slice of bread into the egg mixture, making sure to coat both sides evenly. Heat a large non-stick pan over medium heat and melt the butter. Add the bread slices to the pan and cook until golden brown on both sides, about three minutes per side. Remove the French toast from the pan and set it aside.
- For the hollandaise: in a small saucepan, whisk together the egg yolks, lemon juice and vinegar. Heat the saucepan over a low heat, whisking constantly, until the mixture thickens and doubles in volume, about five minutes. Slowly pour in the melted butter while continuing to whisk until the sauce is smooth and creamy. Season with salt and pepper.
- Cook the bacon under a grill (or in the same pan used for the French toast) until crisp. Layer the toast with bacon and cheese and spoon the hollandaise on top.
