What did you eat yesterday?

For breakfast, I had porridge with honey, sunflower seeds and pumpkin seeds on it. And along with that I had Ryvita with peanut butter and a banana.

For lunch, I had an omelette with ham, mushroom, broccoli and spinach. And for dinner, I made a chicken curry and had it with rice.

What do you eat on a race day?
Generally, it would just be porridge or cereal for breakfast and then as the day goes on I would just have energy bars between races.

I wouldn't have anything big again until I come in off the water. I'd have a bowl of pasta or something when I come in off the water and then just a normal dinner in the evening.

Is there anything you go without that you particularly miss?
Well, I'm always supposed to be eating healthily but I have a very sweet tooth. It's pretty hard for me to resist sweets, chocolate, cakes.

I try to keep them in moderation like most people really.

Favourite place to eat out?
Probably somewhere like Jo'Burger or Milanos. I'm a big fan of Itsa Bagel because it's in Dun Laoghaire so it's a good place to go after sailing. Also, I do a lot of cycling so I've become a connoisseur of coffee shops. Grange in Ballyboughal is great and Kingfisher in Enniskerry has amazing scones.

Scale of 1 to 5, do you enjoy cooking?
Oh, five. I really enjoy it. As a kid I loved baking. I used to make a complete mess of the place with my best friend making cakes and cupcakes. Since I got into sailing full-time, I realised I had to learn to cook healthy food as well.

What do you cook most often?
My mum was born in Mexico and lived there until she was 15 so we cook a lot of Mexican food.
