Christmas berry salsa

Ingredients

  • 1 fresh chilli
  • 1/5 red onion, finely chopped
  • 2 spring onions (scallions), finely chopped
  • 2 tomatoes, finely chopped
  • 1 small yellow pepper, seeded and finely chopped
  • 1 tblsp fresh coriander
  • 1/4 tsp salt
  • 1 tbsp balsamic vinegar
  • 1 tbsp of fresh orange juice
  • 1 tsp honey
  • 1 tbsp olive oil
  • 1.5 cups of blueberries, or blackberries
  • 1 cup of fresh cranberries

Place the tomatoes and yellow pepper in a heat proof bowl. Pour over boiling water and leave for 30 seconds

Remove and place in cold water to cool. Peel the skin off the tomatoes, half them and scoop out and discard the seeds. Repeat with the yellow pepper.

Finely chop the chilli and place it in a bowl. Add the red onion, spring onions, tomato, pepper and coriander and stir until well mixed.

In a small bowl, whisk together the salt, vinegar, orange juice, honey, and olive oil until thoroughly combined. Pour this dressing over the chilli and pepper mixture and stir well. Then stir in the blueberries or blackberries and cranberries.

Allow to stand at room temperature for at least 30 minutes.
