Ingredients
- Makes about 50/60 depending on the size of the cutter
- 350g plain flour
- 55g cocoa powder
- Level tsp table salt
- 1/2 tsp baking powder
- 225g butter at room temperature, softened (consistency of face cream)
- 300g sugar
- 2 large eggs
- 1 tsp vanilla extract
Preheat the oven to 180 degrees/gas 4.
Mix the flour, cocoa, salt and baking powder in a bowl and set aside.
Beat the butter and sugar with an electric mixer until fluffy. Add the eggs, one at a time. Mix in the vanilla extract. Gradually mix in the dry ingredients.
Wrap in plastic and chill for at least one hour.
Roll out the cookie dough on a floured counter, and cut into Christmassy shapes – I make trees.
Bake on a parchment-lined baking sheet for eight to 11 minutes, until firm. Transfer to a wire rack; they will crisp up as they cool down.
