Christmas tree cookies

Ingredients

  • Makes about 50/60 depending on the size of the cutter
  • 350g plain flour
  • 55g cocoa powder
  • Level tsp table salt
  • 1/2 tsp baking powder
  • 225g butter at room temperature, softened (consistency of face cream)
  • 300g sugar
  • 2 large eggs
  • 1 tsp vanilla extract

Preheat the oven to 180 degrees/gas 4.

Mix the flour, cocoa, salt and baking powder in a bowl and set aside.

Beat the butter and sugar with an electric mixer until fluffy. Add the eggs, one at a time. Mix in the vanilla extract. Gradually mix in the dry ingredients.

Wrap in plastic and chill for at least one hour.

Roll out the cookie dough on a floured counter, and cut into Christmassy shapes – I make trees.

Bake on a parchment-lined baking sheet for eight to 11 minutes, until firm. Transfer to a wire rack; they will crisp up as they cool down.
