- 4 large ripe beef tomatoes

Slice the tomatoes into rounds, and lay the slices out on a platter and sprinkle with salt. This will cause the tomatoes to release their own juices, which you then drain off and whisk together with the other ingredients.
Season to taste, remembering that there will be residual salt on the tomatoes, and pour the dressing over the tomatoes before serving.
