Fat: it keeps us warm, it gives us energy, it makes food tasty and it carries out important functions in our cells. But too much fat, particularly if we carry it in our belly, is linked to an increased risk of diabetes, heart disease and even some forms of cancer.
A new exhibition Fat: It's Delicious, at the Science Gallery in Trinity College Dublin from May 16th to June 29th, will examine the bigger picture of fat. As a taster, Claire O'Connell catches up with the curators, Prof Cliona O'Farrelly and Prof Luke O'Neill, to chew the fat.
