Gibson grub
The Gibson Hotel in Dublin's docklands celebrates the launch of a new menu in its Coda restaurant this month. Created by executive head chef Igor Cikarev, the menu serves up the best of Irish produce – with a twist. The gin cured salmon starter, served with Castletownbere crab, tonic gel, Goatsbridge trout caviar and a horseradish and dill mayonnaise dressing is set to be a firm favourite.
