Spaghetti Bolognese

Serves: 4

Cooking Time: 1 hr 15 mins

Ingredients

  • 50g parmesan
  • 1 onion peeled and chopped in half
  • 1 clove of garlic
  • 1 carrot peeled and chopped into chunks
  • 1.5 sticks celery roughly chopped
  • 2 tbsp olive oil
  • 400g beef mince
  • 75g bacon
  • 100ml red wine optional (swap for more stock if preferred)
  • 1 tsp sugar
  • 3 tbsp tomato purée
  • 400g tinned chopped tomatoes
  • 200ml beef or vegetable stock
  • 1 pinch paprika
  • 1 pinch cinnamon
  • 1 pinch thyme
  • 400g spaghetti
  • black pepper
  • salt

Preparation

  1. Your Monsieur Cuisine can be used to make family favourite midweek meals, like this easy spaghetti Bolognese recipe. Leaving it to simmer on the reverse setting means you don’t need to worry about monitoring or stirring the bolognese while its cooking - giving you time to get on with other things!
  2. Begin by grating the Parmesan. Break the cheese into chunks and add to the blender jug, processing for 10 seconds using the turbo button. Transfer to another container and reserve until ready to serve.
  3. Clean the blender jug, then add the onion, garlic, carrot and celery pieces and chop for eight seconds on speed setting five. Scrape down the sides of the jug with the spatula and process for a further 5 seconds on speed setting five.
  4. Add half the oil to the jug and brown the vegetables for four minutes using the roast button. Add half the mince and cook using the roast button until browned. Remove all the ingredients from the jug and set aside, rinsing out the jug to use again.
  5. Add the bacon to the clean jug and chop for five seconds on speed setting 9. Scrape down the sides of the jug with the spatula and add the remaining oil, then brown the bacon for three minutes using the roast button.
  6. Feed in the rest of the mince, a little at a time, through the filleropening in the lid and brown using the roast button. Pour in the redwine and cook uncovered - leaving off the measuring beaker - for 5 minutes using the roast button, until the liquid is reduced.
  7. Once reduced, add the reserved meat and vegetables, along with the sugar, tomato purée, tomatoes and stock. Season with a little paprika, black pepper, cinnamon and thyme, then cook for 30 minutes at 90ºC using the reverse button at speed setting 1, leaving off the measuring beaker insert.
  8. After 20 minutes, cook the spaghetti according to packet instructions and drain in a colander. Season the Bolognese sauce well with salt and pepper, serving piled on top of the spaghetti garnished with the grated Parmesan.

Chocolate Fondant Puddings

Ingredients

  • 200g dark chocolate
  • 200g butter plus extra to grease
  • 6 eggs
  • 250g sugar
  • pinch of salt
  • 120g flour
  • 40g cocoa powder

Preparation

  1. These gooey melt-in-the-middle chocolate puddings are easy to make using your Monsieur Cuisine machine. Chilling the ramekins before adding the mixture helps keep the centre of the puddings a little runny - just make sure you don’t leave the baking tray in the oven while it preheats as this may cause the cold ramekins to crack.
  2. Pre-heat the oven to 230 C/210 C fan/gas mark 8. Grease eight small ramekin dishes with butter, then place in the freezer.
  3. Place the chocolate in the blender jug and process for five seconds on speed setting eight. Add the butter and melt for three minutes at 60 C on speed setting two. Add the butter and melt for a further three minutes at 60 C on speed setting two, then transfer the mixture to another container and thoroughly clean the blender jug.
  4. Place the eggs, sugar and salt in the blender jug and mix for two minutes on speed setting five, then reduce to speed setting three and blend for 60 seconds, slowly feeding in the chocolate and butter mixture through the lid opening.
  5. Add the flour and cocoa and blend for 30 seconds on speed setting three until fully combined. Spoon the mixture into the chilled ramekins and bake in the oven on the second shelf from the bottom for 12 minutes. Serve immediately with ice cream, cream or custard.
